If you're a fan of chocolate, cinnamon and cream cheese, you will dream about this recipe from the first spoonful that you put into your mouth until you make it again. The photo isn't the one I make, but I promise to get the real one up there soon - for now let the ingredients spark your imagination - thank you for your patience. This is one of those recipes that I've had in my collection for a long time, but unfortunately I can't remember where I got it from. If you know the origin then please let me know as not only would I like to credit their genius, but thank them heartily for making our Christmas a memorable one. There are 3 (quite easy but a bit fiddly) stages to this recipe but it is OH so worth it!

Ingredients
  • Sponge base: 4 eggs, 1.5 dcl sugar, 2Tb of cornflour, 4TB flour, 3TB cocoa powder, 1tsp baking powder
  • Moisturiser: 1Tb sugar, 3TB hot coffee
  • Filling: 2dcl plum spread, 200g cream cheese, 1/4 cup sugar, 1tsp cinnamon, 200mls whipped cream which is folded through last
  • grated chocolate for decoration
Directions
  • Step 1 Preheat oven to 200:C
  • Step 2 From the sponge ingredients beat eggs & sugar until fluffy
  • Step 3 Combine dry ingredients (cornflour, flour, cocoa powder, baking powder) and mix in to the eggs & sugar mixture
  • Step 4 Line a small rectangular baking dish with a piece of greased baking paper and pour the mixture into this.
  • Step 5 Bake for 10 minutes
  • Step 6 When it has cooled a bit, turn out onto another piece of baking paper and carefully peel off the bottom piece of paper – taking care not to pull it too hard or the sponge will come off with it.
  • Step 7 Mix moisturising liquid and paint onto the sponge – don’t use all if it is getting too wet.
  • Step 8 Spread the plum puree over the sponge mixture to cover almost to the edge of the sponge and then do the same with three quarters of the cream cheese filling.
  • Step 9 Roll the sponge – using the paper to support the rolling process
  • Step 10 Cover the roll with the rest of the cream cheese mixture, making sure you cover the entire roll and ends
  • Step 11 Put in fridge to firm up and sprinkle with grated chocolate just before serving – enjoy!
