This was a new pancake experience for me as I'd never seen them cooked this way i.e. on a large baking tray. But it certainly is practical - put it in the oven and leave it to cook while you get on with something else. In Finland they are cut into squares and served with whipped cream and strawberry jam - delicious!

Ingredients
  • 3 eggs
  • 2TB sugar
  • 1/2 cup milk
  • ½ cup flour
  • 50 grams butter
  • Whipped cream and jam of your choice to serve
Directions
  • Step 1 Preheat oven to 220:C
  • Step 2 Beat the first 4 ingredients together until you have a smooth batter
  • Step 3 Place a sheet of baking paper on the baking tray and put the butter on top.
  • Step 4 Place in the hot oven and when the butter has melted pour over the pancake batter.
  • Step 5 Bake for 15-20 minutes.
  • Step 6 Remove from oven and sprinkle with sugar. Cut into slices and serve – enjoy!
