This overnight pudding is one of my Mum's recipes and instantly transports me back to our kitchen and the Sunday roast. The mixture needs to be prepared the day before and left to stand overnight. The recipe calls for mixed spice and I haven't been able to find this in Finland, but you can mix together, 1 tsp cinnamon, 1 tsp nutmeg, ¼ tsp cloves and ½ tsp ginger and use 1/2 tsp of this spice mix instead. Mum always served this with cream, but custard also goes very well - enjoy a very special pudding from my childhood.

Ingredients
  • ½ cup cold water (approx. 250mls)
  • ½ cup hot water
  • ½ cup sugar
  • 1 cup sultanas
  • 1 cup flour
  • 1TB butter
  • pinch of salt
  • 1 tsp baking soda
  • ½ tsp mixed spice
Directions
  • Step 1 In a metal bowl, melt the butter in the hot water and add the cold water, sugar, sultanas. Add the dry ingredients (flour last), cover with baking paper (tied with string) and leave it to stand overnight.
  • Step 2 Fill a large pot with water and place the tightly sealed & covered bowl in it. Make sure that it only comes up to approximately halfway as we don’t want the water to go into the bowl.
  • Step 3 Place the lid on top and steam for approx. 2 ½ hours.
