Salmon skewers marinated in soy & honey

The Finnish summer is light & long so my Weber bbq gets a good workout. Pour yourself a glass of wine, or grab a cold beer, put your bbq apron on and head out to your terrace. Use about 4-6 satay sticks (of using wooden ones then soak in water beforehand as they will burn on the bbq). I use metal ones that are made by Weber, but be careful as they get hot so remove with tongs or a spatula. Serve this with cooked new potatoes that have been heated in a foil packet on the barbie at the same time.
Ingredients
- 300 grams salmon cut into large cubes
- 1 red onion sliced into quarters
- 1 red capsicum (paprika in Finnish) cut into large cubes
- 2 TB olive oil
- 1 TB honey
- 2TB soy sauce
- seasoning to taste
Directions
- Step 1 Mix together olive oil, soy sauce and honey and add salmon pieces. Allow to marinate for 2-3 hours
- Step 2 Thread a cube of onion, capsicum, salmon, then repeat once
- Step 3 Pour any remaining marinade over the skewers
- Step 4 Prepare bbq and when hot add the salmon skewers – taking care not to move for a few minutes otherwise the salmon will break up.
- Step 5 Using a metal spatula, turn the skewers as the salmon begins to brown.
- Step 6 Move to a higher level on your bbq if they start to get too brown and allow to cook through – or until the vegetables have softened. Don’t overcook as they should still retain a bit of crunch
- Step 7 Serve with the potatoes and your favourite summer wine – enjoy!
