Like all my other ice-cream recipes, I've adapted this to get a balance of flavour and consistency that suits my palate, but for the most part have been inspired my the beautiful book 'N'ice cream' by Virpi Mikkonen & Tuulia Talvio. I've found though that all my homemade icecreams still taste more 'icy' than 'creamy' - even with the addition of oils - so I throw in a banana and a couple of dates to this to reduce the iciness.

Ingredients
  • 400 mls organic coconut milk
  • 2TB arrowroot power
  • 2 dates
  • 1 banana
  • 3TB black sesame seeds (toasted for extra flavour)
  • 4TB organic liquorice root powder
  • 3TB arrowroot powder
  • 1 tsp organic vanilla extract
  • 50 mls maple syrup
Directions
  • Step 1 Put all ingredients into a blender and blitz until smooth. Pour into the ice-cream maker (following the manufacturer’s instructions) and churn for 45 minutes or until thick. Transfer to a freezer container and remember to take out 15 minutes before serving otherwise it will be rock solid – enjoy!
