Sweet potato (bataatti)

The Finnish Christmas table is laden with delicious food: warm smoked salmon, fish roe, and a range of vegetable casseroles. I first experimented with this sweet potato one a few years ago and have never looked back. It is a perfect match for the salmon and Christmas ham and can be made in a few hours.
Ingredients
- 4 sweet potatoes (batatti)
- Knob of butter
- 1TB cream (optional)
- Salt and pepper to taste
Directions
- Step 1 Peel the sweet potatoes and roast or steam until soft
- Step 2 Add the butter (and cream if using) and mash/puree – season to taste.
- Step 3 Preheat oven to 200:C
- Step 4 Transfer mixture to a baking dish and cook, uncovered for 45-60 minutes or until browned on top.
