Grilled goats cheese & chicken salad

This is such simple yet substantial warm salad - and the sweet juices from the chicken and mushrooms make for a lovely dressing. Just watch your goats cheese - one minute it's still creamy white and the next...burnt. But time it right and the cheese bubbles up to beautiful golden brown - enjoy!
Ingredients
- 2 organic chicken breasts
- 2 goats cheese discs
- 8 mushrooms - cleaned and sliced in half
- cherry tomatoes
- freshly chopped tarragon (rakkuna)
- olive oil
- honey or maple syrup
- salad
- red onion - sliced
Directions
- Step 1 Preheat oven to 200:C.
- Step 2 Put chicken breast on roasting dish and cover with the goats cheese.
- Step 3 Scatter around mushroom.
- Step 4 Drizzle with olive oil and put a small drop of honey or maple syrup on top of the goats cheese.
- Step 5 Roast for 30 minutes or until the chicken juices run clear.
- Step 6 Prepare salad, slice red onions, tarragon and put in a serving bowl.
- Step 7 Place the grilled chicken and goats cheese on the top, season with black pepper and serve.
