Cauliflower pizza base with salami, tomato & blue cheese topping

It's difficult to know how to start this recipe off as I remember my reaction the first time I heard about making a pizza base from cauliflower. But I decided to give it a go and eventually made the most delicious pizza. Head over to the www.theluckypennyblog.com for 'the BEST cauliflower crust pizza' - she doesn't lie. It is the best recipe base & I tested several in finnzkitchen©, it is husband tested, and yes - you can hold it in your hands. But be careful when squeezing the liquid out from the cauliflower - let it cool first or you won't be able to hold your pizza slice because of the bandages covering your burns ;). Topping as follows in ingredients...
Ingredients
- 1 cauliflower per pizza
- salami
- blue cheese - crumpled
- half a tin of passata
- 1TB olive oil
- 1 clove of crushed garlic
- 1 red onion - sliced
- fresh basil
Directions
- Step 1 Make pizza base according to lucky penny blog instructions
- Step 2 For the tomato sauce – heat olive oil in pan and add crushed garlic & soften, then add passata & heat for 5 mins until slightly reduced. Season to taste
- Step 3 Cover the pizza base with the tomato mixture & then with salami, blue cheese or topping of your choice
- Step 4 Cook on a heated metal pizza plate for approx 20-30 minutes at 200:C.
I have to try this one! Love the low-carb idea. Keep them coming.
This is a very delicious pizza! Fun to make and the base crisps up really nicely – just make sure you heed my warning to let the cauliflower cool before squeezing 👍
