Strawberry ice-cream (organic)

This delicious ice-cream was one of my first attempts at making ice-cream and has quickly become a family favourite. However, the first batch tasted more 'icy' than 'creamy' so I've played around with various recipes to get a texture I'm happy with - drawing on sources such as Honestly Healthy, N'ice cream & My New Roots. I also use a large amount of strawberries as it intensifies the flavour and chop half to mix in later. I usually make this fresh as it has a beautiful soft consistency, but if you make it e.g. a day before, remember to take it out of the freezer to soften at least 15 minutes before serving, otherwise it will be rock solid.
Ingredients
- 400 mls organic coconut milk
- 1 litre (a large punnet) of strawberries (chop half to mix in before pouring into the ice-cream maker)
- 3 Tb agave or maple syrup
- 1tsp organic vanilla extract
Directions
- Step 1 Put all ingredients into a blender and blitz until smooth. Add the reserved chopped strawberries. Pour into the ice-cream maker (according to the manufacturer’s instructions) – mine usually takes about 45 minutes to get get thick and then it’s ready to eat – enjoy!
